This “white of whites” is made from selected hand-picked Chardonnay grapes using the highest quality cuvée to create a sparkling wine which is all about elegance, finesse and subtle complexity.

In the glass the wine displays a fine consistent and steady mousse and a typical delicate hue. The first impression on the nose is of a light apple crumble note followed by a citrus character enhanced with white almonds. On the palate it is light and uplifting, displaying a refreshing crisp acidity with aromatics similar to English Cox apples, lemon pie and brioche with marzipan notes.  Serve at 6-8ºC.

It is believed by many that Blanc de Blancs could potentially become England’s flagship sparkling wine style.  At their best, these wines, made from 100% white grapes (typically Chardonnay) are elegant, focussed and vibrant with a core of crisp acidity and subtle apple and citrus aromas backed by brioche and creamy characteristics contributed by lees ageing.   Great Blanc de Blancs wines have great acidity and English-grown Chardonnay grapes have acidity in abundance, like many of our best fruits, from Cox’s apples to blackcurrants and rhubarb.   Whilst this needs to be tempered with extended lees age contact and judicious use of dosage and perhaps some oak, when done well it is the key to producing fine sparkling wines like no other.

Our 2015 Blanc de Blancs is made with hand-picked whole bunch pressed Chardonnay grapes selected from our own vineyard on gently sloping sandstone soils just inland from the South Downs.  The grapes were gently pressed and the carefully selected finest cuvée juice underwent primary and full malo-lactic fermentation in temperature-controlled tanks prior to blending with a small proportion of 2014 reserve Chardonnay wine.  Following bottling and secondary fermentation the wines gently matured for 4 years on their yeast lees prior to disgorging.

Pairing suggestions

Perfect with light seafood dishes such as oysters, crab salad, prawns with parsley and lemon, or lightly smoked salmon but also will compliment well roasted chicken or richer risottos.

A delicious “Blanc de Blanc”, The ‘baked apple pie’ certainly came through and it was the perfect start to a wonderful dinner. we will ordering directly very soon – are casses wooden?     If you like your fizz on the very dry side, then you’re in for a treat with this Sussex-made one that’s created from the chardonnay grapes using top-notch cuvée, the upshot of which is a highly complex and stylish sparkling wine. There’s an unusual pureness about it, with perfumed chardonnay aromas and hints of chalk and citrus, with baked apple, almond and patisserie on the tongue. A stunner on its own, it also complements a long list of foods, including crab, prawns and mussels, along with roast chicken or pork casserole – or, for the vegetarians, mushroom and truffle risotto. Up there with the best of English wines, we’re not surprised it scooped a silver at this year’s International Wine Challenge.

    Quite simply this English sparkling is very very good and truly the best English sparking I have tasted and in actual fact is up there with the very best France has to offer.
