Following on from our 2018, our second Limited Release Barrel-fermented Chardonnay is also made form juice selected from a single clone of Chardonnay growing on the steeper sandy slopes at the west end of our vineyard.
The juice from two vintages (2023 and 2024) was fermented and matured in two large french oak barrels. Most commonly barrels are 225L in size, however we used larger, 400 – 500L, commonly called ‘puncheons’. These puncheons were sourced from a French cooperage with toast customised to our specifications and acacia wood heads to create the desired subtle well-integrated oak impact we desired.
The acacia heads and light toast help lend a fresh, citrus and floral character to the wine whilst the gentle oxidation of the large barrel creates a softer wine. Post fermentation, the wine underwent natural malo-lactic fermentation in barrel to help soften and broaden the palate.
On the nose and plate this wine offers intense and complex aromas of vanilla, hazelnut, white fig, almond, biscuit, dried herbs (sage, rosemary) combing beautifully with spicy notes of cloves, cinnamon sticks and candied fruit. With a robust acidity and tannins this would make an excellent wine to pair with food, included roasted meats.
Just 1,140 bottles were produced; each label written and numbered by hand.
